Default Zucchini Relish

Zucchini Relish

10 cups zucchini shredded

2 cups onions chopped fine or shredded

5 TBL. Salt
2 TBL. Cornstarch
3 sweet green peppers chopped fine
3 sweet red peppers chopped fine
1 TBL. Nutmeg
2 TBL. Black pepper
1 TBL. Turmeric
6 cups of sugar
2 ½ cups of vinegar

Put zucchini, onions, and salt in large pan and let set overnight.

Next day rinse

Stir in rest of indredients and cook for 30 mins.
Put in scalded jars and seal.
Put in canner for 15 mins.

hot dogs etc. If you want to make it more like commercial hot dog relish add some grated carrots and dried mustard to the mixture.

Pinkiris, It is yummy! You use this instead of store bought relish, hamburgers, hotdogs etc. I like the taste of this recipe better than store bought. I would try it first before changing the recipe.

Funny that you posted this because I'm making some right now. My recipe does not call for nutmeg or cornstarch, but boy is it good. I've made this for several years and given as gifts, and everyone likes it.

Imw5, Sounds so good. But what type of vinegar? Apple cider, white, red wine, rice?

This is the same receipe I use and it's delicious. My family love it on hot dogs and with pinto beans.

Pile of Zucchini out there on kitchen table and more waiting for pickin, what kind of cider do I use? Have heard of zucchini pickles before, never made them though.
