The lack of squareness after quilting is probably because you did all diagonal lines. Did you alternate the direction in which you sewed the lines? If not, next time alternate direction every time...

Since you are quilting lines on the diagonal, I would say that the starching is a necessity because you are basically quilting on the bias of many fabrics. Heavy starching is especially beneficial...
