I too never liked the tie in the middle. Like mine to either zip all the way up or if it has snaps ( or buttons) I will sew it up from the bottom to the hip and just step into it when needed.

Sounds to me that you are doing the correct thing to not accumulate a "stash" by buying only for what you intend to make. But do save your scraps from those projects to turn into lovely scrap quilts...
