Reversible Quilts by Sharon Pederson is a good book. It is a quilt as you go technique to make reversible blocks. I am thinking of making my mom a quilt with the method for Christmas.
She also has a technique to make reversible binding (which I haven't tried yet) in case you want to make two sides that don't coordinate with each other (wouldn't have a common color to bind with).
