Aluminum pots will also cause the yellows to turn black. To peel the eggs in one piece, pour the water out and cover with cold water. Pour this water out and shake the pot to crack the eggs. Then cover in cool water again and they peel easily. Make sure you peel them while they are still warm. Sounds complicated but it's not. Very fresh eggs do not do as well as older eggs.
