The Day and Night pattern book has examples of how to make some quilts with just 2,3 or even 4 fabrics. Eleanor uses her typical strip-piecing method that makes the quilt go together quickly, I have been looking to see if I could find you a picture of the 2 fabric version and I think this link at Amazon.com will take you to the page that shows the picture of the book. If you click on the picture of the book another page will come up and if you click on the "SEE LARGER IMAGE button, and click the picture on the right it should be a 2 fabric quilt. Good luck!
