I have two jars, one for quilts in progress; those are labeled with tags, the other jar is plastic and holds all my leftovers. I pull out coordinated colors for scrap quilts.

Either store fabric with your project until ready to make binding or identify the binding that you have already made. Sure helps so you avoid coming across the intended fabric in your stash and using for another project. I guess you can tell, that has happened to me.
