OMG what a wonderful room!! How lucky your are. As far as bending stooping, my friend uses a pingpong table set up in her basment, with bed rises under the legs to make it the right height. This seems to work well for laying out a quilt. If she needs it bigger there her husband helps add either ply wood to extend the table or maybe heavy duty cardboar like from appliance boxes to extend the work space, depending on how much larger and how long she will need it up.
