Let me start off by saying I hated sweet potatoes before trying this recipe.
It is two parts - the first part I use for whenever I just want sweet potatoes and the second is my Thanksgiving and Christmas favorite.
Mashed Sweet Potatoes
4 Tbs unsalted butter, cut into 4 pieces
2 Tbs heavy cream
1/2 tsp salt
1 tsp sugar
2 pounds sweet potatoes (about 2 large or 3 medium) peeled, quartered lengthwise and cut crosswise into 1/4" thick slices.
Pinch of black pepper

Combine butter, cream, salt, sugar and sweet potatoes in a 3-4 qt saucepan. Cover and cook over low heat, stirring occasionally until the potatoes fall apart when poked with a fork (about 35 to 45 minutes).

Off the heat, mash the sweet potatoes in the saucepan with a potato masher. Stir in pepper and serve immediately.

Thanksgiving Day Sweet Potato Casserole
3-4 cups sweet potatoes, cooked and mashed (from recipe above)
3/4 cup sugar
1 cup milk
3 eggs beaten
1 tsp vanilla

Topping:
1 cup brown sugar
1/2 cup flour
1/2 cup butter
1 cup pecans

Mix together sweet potatoes, sugar, milk, eggs and vanilla. Pour into a 9x9 inch baking dish.
Combine the brown sugar, flour, butter and pecans. Top sweet potato mixture. Bake at 350 degrees for 45 minutes. Serves 10.
