Funny you should ask this...I just got a new cookbook today and it has this one:

2-3 large sweet potatoes
1 stick margarine or butter
2 eggs
1 cup sugar
1 teaspoon vanilla
1 teaspoon cinnamon

Peel and slice the sweet potatoes. Place in large pan, cover with water, bring to a boil, reduce heat and cook until fork tender (about 30-45 minutes). Drain well and place in large mixing bowl.

Add the butter and beat with electric mixer until smooth. Add the eggs one at a time while mixer is going. Add sugar, vanilla and cinnamon, mix well then place in casserole dish. Bake 350 for 20 minutes then add:

Topping:

1 cup flour
1 cup brown sugar
1 stick butter
1 cup chopped pecans

Mix together the brown sugar and flour, then cut in butter. Add the pecans, mix well. Put on top of the sweet potatoes and continue 20 minutes more.
