My favorite way to eat sweet potatoes is to just microwave them with the peels on, (poke holes like regular potatoes) them let them cool and peel and eat. I suppose if you just mashed them and added some 'pumpkin pie spice', you would have a good tasting dish. You could add some butter and milk for richness. Baked sweet potatoes are my guilty pleasure. I eat them plain.
