I microwave them also, I find that boiling them makes them too watery...I just eat them like a baked potatoe with some butter or sour cream.
I also roast them in the oven, peel and cube toss them in some olive oil, S&P a little garlic powder, spread them on a sheet pan and bake on high temp 450 until done.
