I can answer one of your questions :D
The BOM is for YOU to follow along but you are encouraged to make each block "your own" so you can certainly embellish the block any way you want. After all....since this is NOT a swap, you are making blocks for YOU so make them the way YOU want to :D
As far as your paper piece question, I don't know that you can make the block without paper piece?? I do know that I have never done it either but am hoping to use the BOM to make myself learn new things so give it a try! Use some really old fabric to practice some easy patterns first.
