I buy the whole loins and cut up into chops as well. They are great! I leave one end to use as a roast. I salt and pepper and sear the meat in a skillet. Then I quarter potatoes into the bottom of my crockpot, dump in a bag of baby carrots and top with sliced onion. (I sometimes add garlic as well.) Salt and pepper the veggies then put the roast on top. Add water up to the bottom of the roast and cook all day on low (or on high for 4 hours). It is wonderful to come home to a complete meal ready to eat and it smells and tastes delicious.
