This sounds so good. I also buy the whole loin.Someone said to wrap potatoes in foil,then put meat on top.Might try that too. DH is not a fan of potatoes cooked in slow cooker.Last Fall I made apple sauce in my SC.Cut apples in half & cut out any bad spots.No water needed. Cook on low till soft,put thru strainer & return to SC.Add small amt of sugar,cinnamon & several apples peeled & large dice. Cook on low till diced apples are done but not mushy.

Then I quarter potatoes into the bottom of my crockpot, dump in a bag of baby carrots and top with sliced onion. (I sometimes add garlic as well.) Salt and pepper the veggies then put the roast on top. Add water up to the bottom of the roast and cook all day on low (or on high for 4 hours). It is wonderful to come home to a complete meal ready to eat and it smells and tastes delicious.
