I'm also a newbie and hated garment sewing but I love quilting. I found the easiest way to begin was to buy a jelly roll and start sewing. It gives you great practice on sewing the 1/4 inch seam, still working on that one, and the cutting isn't that complicated. You can finish a quilt quickly with this method.
