We do it in a VW camper so our fridge is 1.2 cu ft! It's really a challenge. Devilled eggs is great-look for cheap plastic egg shaped trays we got 3 for $1 each.

I like to do dessert. I just did Banana pudding. Instant vanilla pudding, bananas and vanilla wafers plus redi-whip. I will also buy cookies if we don't go out till Thur or Fri. Or bake a cake at home, but you could do it in the RV.

Biscuits, homemade bread of any kind, esp. sweet stuff like banana bread, etc. Our big rig friends always traveled with a bread machine as bread was/is very expensive.

Crock pot chili, beef Stew, veggie soup, corn chowder. You can use evaporated milk if cooling is a problem.

Crackers and cheese, snack things like chips & dip, pretzels are salty but low fat, we have done antipasto with pepperoni, cheese, crackers, olives, smoked oysters or other canned fish, pepperoncini. Has to be good friends for this now, it's gotten expensive. :thumbup: Happy camping. Where do you go? We're mostly up and down the Eastern Seaboard.
