Yes, I do this all the time. Except instead of a ziplock bag(that don't stack well) I purchased a mesh type fabric from JoAnn Fabrics. I made custom size Bags, with zippers. They stack great and fabric breathes. And I put all the fabrics for the quilt, and either put the Book that the pattern in or a color copy of the complete pattern. Saves time having to hunt-up any part of the pattern, when it's time to make project.
