I would start with the Boston Block just because I think it is easy to see the steps. They are all based on the same idea so I don't know that any of them is not easy to do.
I can see the Star Point and Wings maybe confusing you til you get a good grasp of the cut down method.
Just pic a quilt block you like and go for it! They all take a 2 1/2" template except for the few that are 4 rows of 4 blocks. Most of them are 6 rows of 6 blocks.
You can stick with the HSTs (Half Square Triangles) if you like for your first one.
