I live in Nova Scotia, one of Canada's major apple producing areas. We grow over forty varieties of apples here! So I have different favourites depending on how I am using them. There is definitely no question regarding apple pies - most Nova Scotians use Gravensteins (unheard of in Florida). In fact I take 20 pounds to Florida every winter for my pies while there! When the Gravs are gone we stop making apple pies until next year! I use Cortlands for apple crisp. My favourite eating apple is Cox's Orange. And nothing like a Russet or two each year. When I was growing up my mom always bought Northern Spies late in the fall because they are "keepers" and a few pounds of Bishop Pippins for eating apples at Christmas time. So... how many of these have you heard of? Macs? blah LOL But the Honey Crisp and Royal Galas (both grown elsewhere first) are nice eating apples.
