That would work. I usually am using scraps, so I sew my strips to a thin muslin backing. I usually start in the center and work out both ways so I'm sewing two strips at a time, then press, and add two more. I press my backing piece diagonally one way, so I have a "starting line" on the base piece. I sew my strips on diagonally.
Have fun experimenting. I don't think you can make a string block "wrong"!
