Done that before.
You can make another quilt with them or use them for smaller things like pillows, wall hangings, or table toppers. That way, they match the quilt.
If it makes you feel any better, I never cut the right amount. I always cut extra(incase I mess up on something, I don't have to take it apart) and end up with scraps all the time. I don't like following directions though.
