Apple Cake
3 eggs, beaten
2 cups sugar
1 cup oil
2 cups self-rising flour
1 teaspoon vanilla
1 teaspoon cinnamon
1 cup nuts
1 cup raisins
3 cups apples, chopped
Directions
Preheat oven to 350 degrees F.
Grease a 9x13 cake pan.
Mix eggs, sugar and oil together; add flour, vanilla and cinnamon; stir well by hand.
Fold in nuts, raisins and apples; mix well.
Spoon into prepared pan.
Bake for 1 hour.
