Gingerbread for Dummies or Gingerbread for the Culinarily Challenged[/

In a bowl place 1 cup shortening / margarine (I use light olive oil), 1 cup boiling water and let marg melt.
Add 1 cup packed brown sugar and 1 cup molasses. Mix well.
Add 3 eggs, beaten with a fork.
In a bowl mix together, 1 tsp each of baking powder, baking soda and salt;1 1/2 tsp each of ginger and cinnamon; 1/2 tsp cloves.
Mix dry ingredients into the molasses mixture. Mix well. Pour into a 13 x 9 baking dish, greased and floured. Bake at 325 degrees (if using Pyrex) for 30 - 40 minutes in top third of oven.Check frequently to avoid buring.
Cool and serve with ice cream or whipped cream or by itself.

This is a moist cake and is so easy to make. you don't even have to use a mixer - just a whisk. It also freezes well.
