Pizzelle (Italian waffle cookie) makes 8 delicious dozens
4 1/2 sticks butter, softened
4 1/2 sticks margarine, softened
3 c white sugar
3 c brown sugar
1 tsp baking powder
1 1/2 tsp salt
14 eggs-separated*
1 1/2 tsp vanilla
8 cups flour
Mix butter, margarine, sugars and vanilla. Beat egg yolks and add vanilla. Beat egg whites and fold into above mixture. Bake in waffle maker or pizzelle maker at medium temperature.
* Sorry, Aunt Margaret, but I have quit separating the eggs and I think the pizzelle still tastes fantastic. I just add the eggs to the sugars and beat. You can make your own decision about the eggs!
