Weekend going ok, just nice and lazy. Cindy it is also fine with me for you to set a date to have fat quarters in. It will make it easier for you too when you are taking care of it all. I made some carrot/pumpkin muffins last night, but we counted calories/carbs. They turned out so good, and healthy. I used a box of carrot cake mix, one egg, and half can of pumpkin. That's it! I sprayed the muffin pan with non stick spray. I actually put a teaspoon of icing on top of each, but as I said we counted it all out for both calories and carbs. They are full of fiber. Plenty to have later too. Made a dozen. Set temperature at 350 for about 20 minutes. I just gave you a recipe for those who like these flavors. lol...
