My Mother, 89 when she died in 2007, always made this when I was growing up and after. She called it bean sandwiches. She toasted the bread, put slices on a cookie sheet, split a can(s) of pork and beans on the slices. She then put a slice of cheese on each and covered the cheese with 4 half slices of bacon. She them put it in the oven to broil the bacon slowly done. When I asked about the receipe she told me her Mother fixed it during the depression years when she was growing up. Her Father raised pigs to make cured hams and bacon for their meat and to sell any extra they might have along with raising chickens and a cow for milk. Though we are truly blessed with so much more now it is still a favorite of mine and I fix them for my family every now and then. Brings a lot of great memories back when I would help my Mother in the kitchen.
