What you could consider doing - make the top of whatever - then back it with the fleece - you could even make borders of the fleece.
I made a quilt for my grandsons - the only colors I liked for the backing and borders were brushed arnel (feels like washable velvet - bathrobes used to be made of it) - and I used t-shirt knit for the binding - because of the color and because it was manageable. It's their favorite quilt - and it always feels warm because it's fuzzy. The center of the top is made of quilting cottons.
