I worked with Charlotte for almost 20 years--she was a wonderful southern cook and when we had an office party she always made her Mac & Cheese. I finally got the courage to ask her for the recipe and she was so happy to give it to me because she loved to share information with everyone.
Here it is:
Charlotte’s Mac & Cheese
Boil 1 pound elbow or your choice of a smallish macaroni
Drain
Mix in 1 stick butter/margarine
Mix together
1 can evaporated milk
6 eggs
3 cups assorted cheeses
Add to macaroni and place in a 9x13 pan
Bake at 350 Degrees for 45 minutes
For color you can add sautéed red/orange/green peppers
