Tomato Basil Bowtie Salad
1 lb. plum tomatoes, chopped (2 cups)
1/4 C fresh basil leaves, cut into thin strips or 1 tsp. dried basil
1 Tbsp. vegetable or olive oil
1 Tbsp. red wine vinegar
1 clove garlic, minced or 1 tsp. garlic powder
1/2 tsp. salt
6 oz. (1/2 pkg) bowtie pasta, cooked and drained
Freshly ground black pepper
In large bowl combine tomatoes, basil, oil, vinegar, garlic and salt. Add bowties: toss to combine. Sprinkle with pepper.
Serve warm or at room temperature.
Greek Tomato Basil Salad: Add 4 oz. (about 1 cup) crumbled Feta cheese with the pasta.
This makes 3-4 servings
I personally double the dressing for mine.
