They can be canned. Handy to heat and mash. I'm not fond of them frozen. Fresh from the garden, they have a lot of moisture, and I find the texture unpleasant after freezing.
The only experience I've had with freezing potatoes is when I freeze soup. When thawed and heated, the potatoes are mealy.
Perhaps commercially canned potatoes have preservatives added.
