Our guild uses minky for backing of hospice quilts. I have quilted several on my Sweet 16 and found it best, after quilting, to cut the minky about 2" beyond the quilt, then turn it up on top and sew it down as a self binding. Did some by machine and some by hand and either way I think it looks really nice that way. Not sure cutting binding from the minky would work as easily. I prefer not to use batting on these as the minky is heavy enough by itself. I think those who are ill might not want quilt to be very heavy. Good luck with your project.
