Contrast in value is important, but don't underestimate the contrast from color--value isn't everything. Relax, try it, see how you like it--this isn't a contest; it's playtime.
I have a la pass rosette that is b/w and red looking at it in full color it is stunning the red center star shines. It has great contrast / value / whatever you want to call it up close or from a distance. However when you convert it to b/w image you lose all the detail that you can clearly see in color. That is a long way around saying I agree the b/w thing isn't always right.
