I have the Janome Memory Craft 8200 and love it. The throat space is 11". But it costs much less than the 11000 (obviously has many fewer features). Have you test driven the 11000 with all the types of fabrics you normally sew? I'd do that and see if it's as intuitive and as powerful as what you're used to. I've never used a Pfaff so I couldn't tell ya.
