Eparys' suggestion is good, and I have 2 more ideas. How about a simple 9 patch, easy enough for all skill levels. Once you have them they could be squared up a little bit if needed and then use those to make a disappearing 9 patch quilt. Another idea is to make a floating star block, where the points of the star are inside the seam allowance by a bit, making it able to be squared up if needed without losing the points.
