I was just going to plant a few zucchini this year, but.....The girl that helps in the garden planted about 10 (Insanity) from her seeds. So I planted 5 of my powdery mildew resistant (from Johnny's Seeds) on the end of that row. Mine are open style growth, where you can look down into the plant and see the zucchini, but Linda's (helper) had a proliferation of huge leaves. Reminded me of witches broom in the trees. There were 3 of us hunting zucchini and we missed 4 that turned into 24 inch long baseball bats. This is a strange year.

My intention yesterday was to just pick what was ready, then one thing led to another and I soon had 6 loaves of chocolate Zucchini bread.

This recipe makes 3 loaves.

4 cups regular flour
4 cups white sugar
1 cup cocoa
1 teasp. EACH salt, baking powder and baking soda.

Set aside

4 large eggs or 6 medium eggs
1 1/2 cups plain non-fat yogurt
1/2 cup vegetable oil
Beat together with whisk

Add egg mixture to dry ingredients

Add 4 cups shredded zucchini

Makes 3 loaves. Bake 350 for one hour or until done. I use metal non stick pans.
The chocolate-aholic in me makes me sprinkle mini chocolate chips on top before baking.
Freezes well.
