Yesterday was Meatless Monday, so we had squash ravioli with brown butter sauce and tossed salad. They are easy to make, using won-ton wrappers from the grocery.
Another easy and healthy meal is egg roll in a bowl - shredded cabbage (either in the package or shred yourself), grated carrots, ground protein of choice, lite (reduced sodium) soy sauce. You can add whatever additional vegetables you like. Ready in 15 minutes or so.
I will admit that I often make enough of whatever so that we can have leftovers another day. I don't care for packaged foods, want a good meal, but don't want to cook every day.
