I want to make a queen size quilt (88" x 96") but the pattern I want to use isn't big enough, it makes a quilt size of 78" x 90" (with 30 blocks.) Can I just add more blocks to make the bigger sized quilt?

It depends on the size of the blocks. Another way of making it bigger is to add several borders in differing sizes.
Another way, is to add a border and then small blocks, using the same colourways but another pattern that blends with your design. Then add a wide border. So, if your small blocks are 2" finished size, then you can add a 3" border to give you the additional size.

You could. You can also increase the size with additional borders.
If adding more blocks you will have to take into consideration the size block that is in the quilt. You want to add 10" in width so if you have 12" finished blocks you will end up with a slightly larger quilt.

Post the name of the pattern and possibly a link to where we can see it.
Several good suggestions already.
I've added borders before to make a quilt larger.
Also have added more blocks.
A lot depends on how much fabric you have.
