    my slaw dressing is low fat mayo, sugar and vinegar with celery seed...maybe you could use sugar substitute...I never really measure, but probably about 1 cup mayo to 1/4 cup sugar, 2 T vinegar and 1/2 tsp celery seed???

    A quick recipe using zucchini. 5 TBS olive oil
    2 medium zucchini cubed, 2 medium potatoes cubed, 2 medium onions cubed, 2 fresh tomatoes cubed, 1 green pepper cubed
    salt, pepper to taste and I add Basil. Grated Parmesan cheese when you serve. Place in a large sauce pan, Add cubed vegetables, salt and pepper. Let simmer covered until
    vegetables are tender (about 30 minutes) Sprinkle with Parmesan cheese just before serving serves 6 ENJOY

    Do you make sweet zucchini relish. It tastes like sweet pickle relish. If that is not the relish you are making I will send you the recipe. I had to buy my zucs, cuz I don't garden. I'll be making my relish Tues.

    i do not have a recipe for zucchini slaw, i too can not have cabbage . so i use turnips, in stead of cabbage, looks the same and family likes it better, i also use zucchini in stead of noodles for lasagna. and spaghetti, both are awesome,

    Oh!!! another thing for zucchini is Mock Crab Cakes

    THANK YOU for the suggestion to make the Mock Crab Cakes. I just made them for dinner and they were wonderful! I didn't even miss the crabmeat (and neither did my husband :thumbup:
