    Came across this recipe the other day. I think it is a keeper!
    PUMPKIN COOKIES - 1970 Southern LivingOur Best Recipes
    (6 dozen)


    Ingredients
    1 cup shortening
    1-1/2 cup sugar
    1/2 cup brown sugar
    1 egg
    2 tea. vanilla
    1small can pumpkin
    4 cups all purpose
    flour
    1/2 tea.salt
    1 tea. cinnamon
    1 tea. baking powder
    1 cup raisins
    1 cup crushed walnuts


    Cream shortening and sugar;add egg, vanilla & pumpkin. Mixwell. Mix flour with other ingredients, add
    to mixture (which will be stiff). Stir in raisins and walnuts.Drop by heaping tablespoons onto greased and floured cookie sheets. Bake at 375 degrees F.for 20 minutes. Cool - place several cookies in plastic or paper bag with powdered sugar, shake bag, remove cookies.


    Southern Living calls for frosting: 1/4 lb soft butter -1 pound powdered sugar, 1/8 tea. vanilla, 3 or 4
    TBS milk. Cream butter; add powdered sugar,mixwell, add salt,vanilla and milk a tablespoon at a time, beat until smooth, cool and frost cookies

    Sounds delicious! I keep waiting for the price of canned pumpkin to come down this year so I can buy some more. Is it just me or do you think it was a little pricey this year?

    These sound delicious, how would I prepare them for a diabetic and ones who watch their cholesterol?

    Don't know about the cholesterol, but the diabetic, use splenda sugar and brown sugar mix, check for amounts to equal receipt and soy flour, may take a little less flour, so don't add all at once., Maybe egg beaters for egg?

    These cookies sound yummy! I found canned pumpkin in the larger cans at Save A Lot and bought quite a few. I am diabetic and use the pumpkin in alot of my recipes and cut back on the oil. I agree that unfortunately things are not going to get any cheaper but I buy it when I see it on sale. My husband sometimes thinks I am crazy to do this but it saves us money when things are tight. Thanks for sharing your delicious recipe!!!! Happy Holidays.
