    On the show "the Chew" yesterday they posted a gingerbread bread recipe yhat reminded me of the brown bread that used to be sold in cans. It looked amazing! Google the show and there is a link to recipes- I may try it too!

    You can still get that bread in the cans at the grocery (I think it's the same as you're talking about). Sometimes it's by the baked beans as that's what it's sometimes served with (in my area of the country). If we wanted to make it fancy for a luncheon, we'd put cream cheese with pineapple in the middle. Oh, yummers!

    Is what you are wanting the Boston Brown Bread recipe? The gingerbread recipe I have that was my grandmother's is more a dessert than bread but here it is--
    3 c. flour
    1 1/2 tsp soda
    1/2 tsp salt
    2 eggs
    3/4 c. brown sugar
    1/2 c. melted fat
    1/2 tsp cinnamon
    1/2 tsp cloves
    1/2 tsp nutmeg
    2 tsp ginger
    1 c. molasses
    1 1/4 c. sour milk or 1 c. boiling water
    Cream together the fat and sugar. Sift dry ingredients together. Add to creamed mixture alternately with liquid, beating well after each. Bake in a greased and lightly floured 9 x13" pan at 350 deg for 35-40 minutes or until done. Best served warm, possibly with a dollop of whipped cream.

    Ginger loaf recipe from New Zealand.
    We slice and butter it.... like bread.

    two and a half cups flour, 2 teaspoons ground ginger, 1 teaspoon spice, 125g butter,125g sugar, three quarters cup golden syrup, 1 cup milk, 2 teaspoons baking soda...

    Sift flour, ginger and spice together, beat butter, sugar and golden syrup together in another bowl, stir in milk and baking soda and pour into dry ingredients...
    Bake in loaf tin for one hour.. moderate oven. 175 degrees would do the trick.

    A couple of questions
    Spice is AllSpice?
    175degrees is a C measurement, yes? Which is closer to 350 for our American friends...?

    While we Canucks also use C for the most part, most of my recipes are in F and that got me once when I found a great bagel recipe that didn't specify it.

    I actually have two recipes:

    Ginger Tea Bread
    Sift together: 1 1/4 cup flour, 1/4 cup sugar, 1 tsp. baking soda, 1/2 tsp. salt, 1/2 tsp. ginger, 1/2 tsp. cinnamon, 1/2 tsp. cloves

    Mix together and add: 1 unbeaten egg (best at room temp not out of the fridge) 1/2 cup molasses, 1/4 cup very soft margarine.

    Beat well and add 1/2 cup BOILING water.

    Pour into a greased 8x8 inch pan. Bake at 350 degrees for 30-35 minutes.


    This next one is old. I've been making it for at least 40 years. Be aware that it does tend to fall in the middle if you take it out of the oven too soon or sometimes even if you test it before it is done. Very rich and moist. Wonderful served warm with whipped cream.

    Gingerbread

    Cream 1/2 c. soft margarine, 1/2 c. sugar, 1 tsp. cinnamon 1/4 tsp. cloves, 1/ tsp. ginger.

    Add 1 beaten egg and 2/3 c. molasses

    Sift together 2 c. flour, 2 tsp. baking powder, 1/2 tsp. baking soda, 1/2 tsp. salt and add alternately with 3/4 c. sour or butter milk.

    Stir in 3/4 c. chopped nuts (optional)

    Spread in a greased 8x8 pan and bake at 350 degrees for 45-50 minutes.
