The pattern is in a book, Guess Who's on My Quilt, which comes up for sale from time to time. If you were just selling a pattern for the quilt's background, or if you were placing an entirely different dog somewhere on the quilt, I would say go for it. But if you're copying this particular dog then you're copying Billie Lauder's original design. Changing it up just a little doesn't count as a substantive change. I doubt that there's anyone waiting in the wings to sue you, but you would be doing something that's unethical.
