Been making this for years...very simple...very good

LEMON CREAM PIE
4 large egg yokes
4 tablespoons grated lemon zest
1/2 cup freshly squeezed lemon juice (Meyer lemons are my favorite)
1 14oz can sweetened condensed milk
1 gram cracker or shortbread crust (I like shortbread best)

Whisk yokes & zest together for 2 minutes until mixture is pale yellow. Whisk in condensed milk until smooth, then whisk in lemon juice. Cover mixture & set aside at room temperature for 30 minutes.

Warm up crust & then pour thickened filling in. Bake at 325 until center is firm (15 to 20 minutes). Let pie cool for 1hr uncovered then cover & chill in fridge for 3hrs.

Hi everyone who helped me find the pie recipe. I did make 2 , different recipes, and both turned out so well, hubby said "make them again". thanks so much, this is such an easy pie to make and is so refreshing for summer ..Jacie

I made this yesterday afternoon. It did seem to firm up in the refrigerator but not quite enough. I put it in the freezer overnight, and it cut great today. But after being out of the freezer a short while but still in the refrigerator, it got way too soft (like cool whip) to slice. I have put it back in the freezer, and am thinking that is what I will need to do to get this to slice ok.

Sorry I'm late reading this, but this is my recipe

Stir together until well blended:
6 oz frozen pink lemonade concentrate (I have to buy 12 oz cans now, can't find 6 oz.)
1 can Eagle Brand milk
Fold in 8 oz container of Cool Whip
Pour into graham cracker crust. Refrigerate several hours or overnight.

Very rich and yummy!

Here is a recipe that was on Cool Whip a few years ago & I make this often.
1/2 - cup lemon juice, I use 3/4 cup because I like a tart pie
1 - can Eagle Brand Sweetened Condensed Milk
1 - 8 oz. Cool Whip
Graham Cracker Crust
Mix lemon juice, condensed milk together, them fold in cool whip. Pour into graham cracker crust & chill for 2-3 hours. It really is easy & delicious.

OMG, this pie was delicious! Actually I had enough filling for 2 pies but I only had one pie crust I had to put it in the freezer to get it to set. Maybe I put too much lemonade in it, but it was soooo good.
