The quilt as you go method would be perfect for you. There are so many tuts that would help you with this. The best part is when you get the blocks sewn together, your quilt is finished. You can also have a different fabric on the back of your blocks & it would end up being a reversable quilt.

I think you have a good start. If you can eek out 30 minutes a day, you;ll be suprised by how much you can get done.
Even if the quilting isn't fully done, he will love that you are making it for him, and encourage you to finish it!
