    you might try adding applesauce sometimes I add it to regular cake mixes

    All of the given recipes sound great. I usually add about 1/2 cup unsweetened applesauce or 1/2 cup Greek yogurt (plain) instead of the shortening to cut down the fat, but keep it moist. Basically make sure that the batter is not too thick.

    There are two recipes, it is the one with sour cream.
    Love love love it, add a scoop of vanilla ice cream, some strawberry sauce or Jam and make yourself a banana bread split. Yummy!

    I always use buttermilk in my banana bread. Any of the recipes that call for milk or sour milk will work great with buttermilk. It makes the bread so moist and good.

    This really is moist and I have been making it for 40 years. If you don't have Buttermilk, make sour milk instead.

    Called Best Ever Banana Bread

    Ingredients

    1-3/4 cups all-purpose flour
    1-1/2 cups sugar
    1 teaspoon baking soda
    1/2 teaspoon salt
    2 eggs
    2 medium ripe bananas, mashed (1 cup)
    1/2 cup canola oil
    1/4 cup plus 1 tablespoon buttermilk
    1 teaspoon vanilla extract
    1 cup chopped walnuts

    Directions

    In a large bowl, stir together flour, sugar, baking soda and salt. In another bowl, combine the eggs, bananas, oil, buttermilk and vanilla; add to flour mixture, stirring just until combined. Fold in nuts.
    Pour into a greased 9-in. x 5-in. loaf pan. Bake at 325° for 1 hour 20 minutes or until a toothpick comes out clean. Cool on wire rack. Yield: 1 loaf.

    I too use this basic recipe but I throw in 1/2 cup of chopped maraschino cherries, and 1/2 cup of mini chocolate morsels into the batter along with the nuts (sometimes walnuts, sometimes pecans, or both) and everyone I make it for just loves it! Warm out of the oven with cream cheese.......Yum!!

    I like to throw in about a 3/4 cup of thawed frozen blueberries into my banana bread, also I like chunky walnuts too.

    I don't ever add nuts to my banana bread, but I do add chocolate chips and it is wonderful!!!
