    I too think you will be fine with your 2.5" cuts. As bearisgray said you should get 8 full 2.5" strips off that strip set with a bit left over as scrap. According to calculations, you only actually need a 20" strip set to get what you need so the directions did allow for minor cut fluctuations. That quilt is going to be so cute by the way!
