I use a edge joining foot and keep the blade in the center of the seam. I can get very straight lines.
I usually move the needle to one side of the blade about two stitch widths so I'm not sewing right into the seam stitches.

I used to only SITD because I hadn't found this board yet! And I didn't know how else to do it! Now, I've learned that SITD can really be hidden/not distracting by slightly spreading seam as I stitch straight, like the middle of the circles in this kialiedoscope quilt. Love the serpentine stitch also now that I've used it.

I also press to the side and stitch in the ditch on the "low" side. I am aware of every stitch that crosses the line, but I have learned to embrace the idea that these mistakes show how challenging it really is. The recipient of any quilt from me will know how much I care because I was willing to put that effort in! (That's my story and I'm sticking to it!) :-D

I am no help with your question about stitching in the ditch because I tried stitching in the ditch years ago and found my needle was splitting my thread in my original seams on my first quilt. I decided that the wavy seam line on my sewing machine was a better choice for me. I really feel like wandering back and forth across the original seams help make a sturdier quilt for me. None of the seams support all the weight of the quilt My wavy stitch is about 1 inch long wave and goes out about 1/2 inch.
