I was just in BJ's (like Costco or Sam's club) and saw a Betty Crocker Bisquick cookbook for $5.99. An entire cookbook with recipes for Bisquick!

I just made muffins by adding sugar and zucchini/apple/carrots/walnuts/coconut oil/vanilla and cinnamon to the gluten free Bisquick. They are good with a nice texture.

There is an apple cake that is yummy on their site.

Dumplings on top of stew beef or chicken. The list goes on. Biscuits for shortbread. Biscuits and honey.

Impossible Lasagne & Taco pies are both great
I agree. the bisquick recipe site has lots of options. The impossible pies are so easy and delicious. There is also a very good coffee cake that I will double the topping portion of the recipe. Put half the batter in pan, half the topping then batter and finish with topping ( I love cinnamon)!
