    We had liver pate at Christmas and my hubby just loved it. I started looking for a vegan alternative and found this site and recipe:

    The only ingredient that I don't have access to is Vegemite. I suppose that I could find that online.

    In answer to some questions that members have about protein...there are lots of ways to get plenty of good, healthy and complete protein without eating animal products. Beans, lentils, other legumes, seeds, soy products, seitan, various grains s/a quinoa and spelt, non-dairy milks, even many natural fruits and vegetables have some protein in them.

    Oh...thank you! Thank you! I hear ya about not wanting to give up certain things. I love real butter, but I do cut waaaay back on it when I'm on track. I use Earth Balance instead...it's OK.

    Puffed Quinoa is a product that I frequently see in recipes and I've never had it. I do have quinoa on hand though, so I looked up how to make Puffed Quinoa. Here's a Youtube video on it.

    Tropit - have you tried Mikoyos "butter"? It's surprising good. It is expensive, but unless I'm on a baking spree, we probably use less than a cup in an entire month.

    I have not tried her butter. I bought her cheese making book when it first came out many years ago. She is from our area, so I had heard of her. Sadly, I did not like many of her recipes. They weren't cheese, just cheese-like products and I didn't think that they were that good. However, that was a long time ago. She has since gone public with her products and I'm sure that they are not the same as in the earlier days. I should give her stuff another try.

    I should mention some good vegan recipe books that I have...in case anyone's interested.

    Veganomicon, by Isa Chandra Moskowitz & Terry Hope Romero
    -The bible of vegan cooking. Anything by Isa Chandra Moskowitz is worth buying. It's straight forward. All of the recipes are well tested and usually pretty good. I see that the 10th anniversary book is out. I need that.
    * I have several books by Isa Chandra Moskowitz and they are all very good. I'd recommend any of them:
    Isa Does It: Amazingly Easy, Wildly Delicious
    Appetite for Reduction
    The Superfun Times Vegan Holiday Cookbook

    CrossRoads, by Tal Ronnen
    - Tal Ronnen is somewhat of a celebrity chef in LA and has a wonderful, upscale, vegan restaurant in Los Angeles. I've never been there, but I'd like to go someday. The recipes are classy and good. BTW...Tal Ronnen is the person who created Kite Hill non-dairy products. I don't know if he still has a hand in the company, but I have to say that all of the Kite Hill products are very good.

    The Millennium Cookbook, by by Eric Tucke, John and others
    -This is another cookbook that is inspired by a famous vegan restaurant in SF, (but moved to Oakland.) I have eaten there and it was good. Again, like Crossroads, the recipes are sophisticated and elegant.

    The Wicked Healthy Cookbook: Free. From. Animals.
    by Chad Sarno & Derek Sarno , et al.
    - Written by two brothers that have been private chefs to vegan celebs, s/a Woody Harrelson. Every recipe is exciting to make and absolutely delicious! It's one of my favorite cookbooks.

    I have some other cookbooks that aren't completely vegan, but have a lot of vegan recipes in them. I won't mention titles, but if you're looking for some great vegetable based meals, try some Indian, or Eastern Mediterranean cookbooks.

    Got any good vegan cookbook recommendations?

    tropit, thanks for the tip on Field Roast Chao. It looks like it is available at a couple of stores nearby, so I will get that for DH when I return from FL. He is allergic to almonds, so nothing almond based - which eliminates a lot of the non-milk "dairy" products.

    Allergic to almonds...oh, that's too bad. All of Kite Hill are almond based, I think. I love almonds.

    My DH went out yesterday foraging and came home with a load of Chanterelles....yes! I found this recipe that I'm going to try tonight:

    I know that not everyone has access to Chanterelles, but I think that other mushrooms, such as Shitake, portabella, simple white mushrooms would also work well for this.

    Here's a tasty, vegan recipe for Ribolita...a Tuscan bean soup. The "Covalo Nero" is our Tuscan Kale. This is a good and simple recipe. I added a chopped up Field Roast Sausage for extra flavor and bite.
