This is so yummy warm! I make it when the blackberries are ripe in the woods, or with fresh blueberries, suskatoons or raspberries. Havent tried strawberries yet though.
2 cup fresh berries
1 tsp cinnamon
1 tsp lemon juice
1 cup flour
3/4 cup sugar
t tsp. baking powder
1/2 cup milk
3 Tablsp. butter or marg. melted
Topping
3/4 cup sugar
1 tablespoon cornstarch
1 cup boiling water

Toss the berries with the cinnamon and lemon juice, in a greased 8 inch square baking dish. In a bowl, mix flour, sugar, bk powder, stir in milk and butter. Spoon over the berries.

For topping, combine the sugar and cornstarch and sprinkle over the batter. Slowly pour theboiling water over all.
Bake at350 for 45 to 50 mins.
9 servings!

Try this with rhubarb cut into 1" pieces - this recipe is almost identical to one called Rhubarb Glazed Pudding and my dh and I love it! The cornstarch/sugar on top and the boiling water are what makes that nice crispy top - just remember to NOT mix it in. YUMM - can't wait until June for fresh rhubarb - just used the last package in my freezer.

Not sure you meant to say 'Saskatoons'. If so, they are a high bush blueberry type fruit that are slightly blue/red in colour. You can use them as you would blueberries.

Yep, Catherine Marie, lol, thats what they are! Where I am the soil isnt acidy enough for blueberries. These are simular, but grow well here.
Kareen, I will try it with rhubarb...that is one of the first things that pop up here in the Spring!!!!!!!!!! Thanks!
